Keeping Clean
I finish off my knives with a beeswax polish giving them rust and acid resistance.
It is best practice to always work with a damp cloth to regularly wipe down the knife.

Only use clean cold water to wash off the knife and wipe off with a dry cloth.
It is best not to let water droplets or acids (oinion, citrus, tomato etc) sit on the blade for extended periods of time to avoid acid corrosion.
